The pepper

What a serrano hot sauce actually tastes like

The serrano comes from the mountains of Puebla and Hidalgo in Mexico, and its name comes from sierra, the Spanish for a mountain range. It measures 10,000 to 25,000 Scoville heat units, about three times a jalapeño, and it’s a classic pepper for pico de gallo.

Crisp rather than grassy

Serranos have thinner walls than jalapeños, so they taste sharper and cleaner, with less of the green-bell flavor and a quicker, brighter heat. That freshness is why lime, garlic and onion show up in so many serrano sauces, and why the best ones taste like a salsa you just made.

Not every serrano sauce is fiery

The pepper sits in the upper half of our medium band, and once it’s diluted, about three quarters of the sauces here are mild or medium. About a quarter reach hot or extra hot, and several of those blend in something stronger, like habanero or Carolina reaper.

How to use it

Serrano sauces suit anything that wants fresh heat: eggs, tacos, burritos, grilled chicken and fish. Stir a spoonful into soup or guacamole, or shake it over rice and beans where a jalapeño sauce would get lost.

Buying your first one

If you like green jalapeño sauces, a serrano sauce with lime and garlic is the natural next step. When that starts to feel easy, cayenne and then habanero are the next rungs up.

Questions

Serrano FAQ

Is a serrano hotter than a jalapeño?

Yes, about three times hotter on average: 10,000 to 25,000 Scoville units against a jalapeño’s 2,500 to 8,000. Serranos also taste crisper and less grassy. If you like jalapeño sauces, serrano is the easy next step.

What is serrano hot sauce good on?

Eggs, tacos, burritos, chicken and fish, plus soups and guacamole. It’s at its best wherever you want fresh, green heat rather than smoke or fruit.

What stops the burn?

Dairy. Capsaicin is oil-soluble, so milk, yoghurt or ice cream lift it off your tongue; water spreads it around. Bread and rice help by absorbing. Alcohol makes it worse.

How much is shipping?

How hot is a serrano hot sauce?

The pepper measures 10,000 to 25,000 Scoville units, but a finished sauce is milder because the serrano is diluted by vinegar, lime and everything else in the bottle. Most serrano sauces here are mild or medium on our scale, and about a quarter reach hot or extra hot.
