Scorpion Pepper Hot Sauces

Trinidad’s superhot, named for the stinger-like tail on each pod. Scorpion peppers average about 1.2 million Scoville units with a sweet, fruity flavor under a fierce burn, and most of the sauces here are extra hot, built with garlic, citrus, ginger and cumin for flavor that stands up to it.

The pepper

What a scorpion pepper hot sauce actually tastes like

Scorpion peppers come from Trinidad and Tobago, and the name describes the pointed tail on each pod. The Trinidad Scorpion Butch T was Guinness World Records’ hottest pepper from 2011 until 2013, and in 2012 New Mexico State University’s Chile Pepper Institute named the Trinidad Moruga Scorpion the hottest pepper it had tested. They average around 1.2 million Scoville heat units.

Fruit under the sting

Like other Caribbean superhots, scorpions have a sweet, fruity flavor you can taste for a moment before the heat hits hard and lingers. Makers give that fruit a partner, such as orange, lime, ginger or pear, and ground it with garlic and cumin.

Mostly extra hot

About two thirds of the sauces here are extra hot, and the rest split between hot and medium. Several also blend in ghost pepper, Carolina reaper or 7 Pot for an even bigger kick.

How to use it

Use scorpion sauce by the drop. It’s at home on wings, chicken, pizza and tacos, and a few drops stirred into chili, barbecue sauce or a marinade will heat an entire batch. Keep something dairy nearby.

Buying your first one

Get comfortable with a ghost pepper sauce first. Then choose a scorpion sauce rated hot, with fruit or garlic in the recipe, before you reach for the extra hot bottles.

Questions

Scorpion Pepper FAQ

How hot is a scorpion pepper hot sauce?

The pepper averages about 1.2 million Scoville units, but a finished sauce is milder because the scorpion is diluted by vinegar, fruit and everything else in the bottle. Even so, about two thirds of the scorpion sauces here are extra hot (350,000 SHU and up) on our scale; the rest are hot or medium.

Is a scorpion pepper hotter than a ghost pepper?

Usually, but not by much. Scorpion peppers average about 1.2 million Scoville units against a ghost pepper’s 1 million, and both sit below the Carolina reaper at about 1.6 million. Heat varies more between sauces than between these peppers, so go by each bottle’s rating.

Which scorpion sauce should I buy first?

One rated hot rather than extra hot, with fruit, citrus or garlic in the recipe. If you haven’t tried a superhot before, start with a ghost pepper sauce.

What stops the burn?

Dairy. Capsaicin is oil-soluble, so milk, yoghurt or ice cream lift it off your tongue; water spreads it around. Bread and rice help by absorbing. Alcohol makes it worse.
