Cherry Hot Sauces

Dark, tart and a little unexpected. Cherry gives hot sauce a deep fruit flavor that plays beautifully with smoke, bourbon and roasted meat.

These lean hotter than most fruit sauces: the biggest group is hot, and a couple are extra hot, often built on habanero or Carolina reaper. Makers pair cherry with maple, bourbon, coffee or cinnamon. Try them on ribs, pork, wings and burgers, and a few are even made to drizzle over ice cream.

The flavor

What a cherry hot sauce actually tastes like

Dark, tart and a little unexpected. Cherry doesn't behave like the tropical fruits: it's deeper and less sweet, and it pairs with smoke, coffee, cinnamon and maple rather than lime and ginger. The result tastes closer to a steak sauce or a mole than to a fruit sauce.

These lean hot

Half of the collection is rated hot and a couple are extra hot, which makes cherry the fiercest of our fruit flavors. Habanero and Carolina reaper are the usual peppers. Dark fruit stands up to a superhot better than a light one does.

How to use it

Ribs, pork, beef, wings and burgers, where it works like a sweet-sharp barbecue glaze. A few bottles here are made to go over ice cream, and they mean it: the cold and the fat blunt the heat, and the cherry reads as dessert until the burn arrives. It's also good stirred into a pan sauce for duck or venison.

Questions

Cherry FAQ

Hot sauce on ice cream? Seriously?

Seriously. Half the bottles in this collection name it, because cold dairy blunts capsaicin and the fat carries the fruit flavor, so a cherry sauce tastes rich rather than harsh. Start with a small spoonful over vanilla.

How hot are cherry hot sauces?

Hotter than the other fruit collections: half are rated hot and a couple are extra hot, usually on habanero or Carolina reaper. Check the level on the card before treating one like a dessert topping.

What do mild, medium, hot and extra hot mean?

They're our own four heat levels, and every bottle gets one. Mild is under 2,500 Scoville units, medium runs 2,500 to 30,000, hot covers 30,000 to 350,000, and extra hot starts above that. The rating describes the finished sauce rather than the pepper in it, so a habanero sauce with plenty of fruit and vinegar can still land at medium. Every product card shows its level, and you can filter any collection by it.

What stops the burn?

Dairy. Capsaicin is oil-soluble, so milk, yoghurt or ice cream lift it off your tongue; water spreads it around. Bread and rice help by absorbing. Alcohol makes it worse.
