Most are medium and built on habanero, while others use serrano, ghost pepper or Carolina reaper. Makers add lemon, maple, ginger or blackberry for depth. They’re excellent on grilled chicken, pork and steak, stirred into barbecue sauce, or over vanilla ice cream.
