Jalapeno Hot Sauces

The pepper most people start with. A jalapeño runs 2,500 to 8,000 Scoville units, so these sauces are about bright, green flavor first (lime, garlic and cilantro), with heat gentle enough to pour on eggs and tacos every day.

The pepper

What a jalapeño hot sauce actually tastes like

The jalapeño takes its name from Xalapa, the capital of Veracruz in Mexico, and it has been the official state pepper of Texas since 1995. It measures 2,500 to 8,000 Scoville heat units, which puts the pepper itself at the bottom of our medium band.

Green, bright and a little grassy

Green jalapeños taste fresh and vegetal, close to a green bell pepper with a clean bite; left to ripen red, they turn sweeter. That’s why makers reach for lime, garlic, onion, cilantro and tomatillo, and why so many of these sauces read like salsa verde in a bottle. Smoke-dried red jalapeños are chipotles, which have a collection of their own.

Not every jalapeño sauce is mild

Most of the sauces here are mild or medium, but about one in six reaches hot or extra hot. Plenty of jalapeño sauces also use a hotter pepper (about three in ten include habanero), with the jalapeño there for flavor and the other pepper for heat. Check the heat dot on each card.

How to use it

This is the everyday bottle: eggs, tacos, burritos, burgers, pizza and sandwiches all take it well, and a jalapeño sauce with some vinegar makes a quick marinade for chicken. Because the heat is gentle, you can use it by the spoonful rather than the drop.

Buying your first one

Start with a green sauce built on lime and garlic for the classic taste, or a fire-roasted one if you like more depth. If jalapeño already feels tame, step up to a serrano sauce: the same kind of fresh flavor with about three times the heat.

Questions

Jalapeno FAQ

How hot is a jalapeño hot sauce?

The pepper measures 2,500 to 8,000 Scoville units, and a finished sauce is milder still because the jalapeño is diluted by vinegar and everything else in the bottle. Most jalapeño sauces here are mild or medium on our scale. The few that reach hot or extra hot usually get their heat from a second, hotter pepper.

Is chipotle the same as jalapeño?

Yes. Chipotles are ripe red jalapeños that have been smoke-dried, which gives chipotle sauces a deep, barbecue-like flavor, while green jalapeño sauces taste fresh and bright. For the smoky side, browse our chipotle hot sauces.

What is jalapeño hot sauce good on?

Eggs and tacos above all, then chicken, burritos, burgers, pizza and sandwiches. The heat is gentle enough to use generously, and a green jalapeño sauce with lime doubles as a quick marinade or a dressing for slaw.

What stops the burn?

Dairy. Capsaicin is oil-soluble, so milk, yoghurt or ice cream lift it off your tongue; water spreads it around. Bread and rice help by absorbing. Alcohol makes it worse.
