Mango Hot Sauces

Tropical sweetness with a proper kick. Mango’s rich, juicy flavor is a natural partner for fruity peppers, so these sauces come out bright and easy to love.

Mango and habanero is the classic combination, and it’s in most of the sauces here; others reach for scotch bonnet or ghost pepper. Medium is the biggest group, often with lime, ginger or pineapple for extra brightness. Try them on fish tacos, grilled chicken, pork, shrimp and wings.

The flavor

What a mango hot sauce actually tastes like

Mango and chili is one of the oldest pairings there is, and in a bottle it works for a simple reason: the fruit's sweetness and thick texture soften a pepper's attack while its own tropical flavor sits right next to the fruitiness of a habanero or a scotch bonnet.

Mango and habanero, seven times out of ten

Habanero is in about seven in ten of these sauces (far more than in any other flavor collection), with scotch bonnet, ghost pepper and jalapeño behind it. Lime is in nearly two thirds, ginger in a third, and pineapple often joins in to widen the fruit.

How hot these get

Mostly the middle: a little under half are medium, with the rest spread across mild, hot and extra hot. Sweetness masks heat at first, so give a mango sauce a few seconds before deciding how much to add.

How to use it

Chicken, tacos, pork, wings and seafood, and fish tacos most of all. The sweetness works the way a mango salsa does against white fish or shrimp. It's also good stirred into rice, brushed on pork as it comes off the grill, or spooned over a cheese board.

Buying your first one

A medium mango-habanero sauce with lime is the classic, and the most useful. If you like Caribbean flavors, look for one built on scotch bonnet instead; if you want the sweetness with more of a fight, the collection has a few extra hot bottles that still taste of fruit.

Questions

Mango FAQ

Why do mango and habanero go together so well?

Because they taste of similar things. A ripe habanero has a distinctly fruity, apricot-like flavor under its heat, so mango extends what's already there rather than covering it. The fruit's sugar and body also blunt the first hit of the pepper, which makes the sauce easier to pour freely.

Are mango hot sauces sweet?

Sweeter than a vinegar-forward sauce, but they're not dessert. Most makers balance the fruit with lime, vinegar or ginger, so what you get is a fruity sauce with a clean finish. If you want the sweetness dialled up, look for bottles that also list honey or brown sugar.

What do mild, medium, hot and extra hot mean?

They're our own four heat levels, and every bottle gets one. Mild is under 2,500 Scoville units, medium runs 2,500 to 30,000, hot covers 30,000 to 350,000, and extra hot starts above that. The rating describes the finished sauce rather than the pepper in it, so a habanero sauce with plenty of fruit and vinegar can still land at medium. Every product card shows its level, and you can filter any collection by it.

What stops the burn?

Dairy. Capsaicin is oil-soluble, so milk, yoghurt or ice cream lift it off your tongue; water spreads it around. Bread and rice help by absorbing. Alcohol makes it worse.
