7 Pot Primo Hot Sauces

What a 7 Pot Primo hot sauce actually tastes like

The 7 Pot Primo was bred in Louisiana by horticulturist Troy “Primo” Primeaux, who began crossing a Naga Morich with a Trinidad 7 Pot around 2005 while working at the University of Louisiana at Lafayette. You can spot it by the long, scorpion-like tail on each pod. Primeaux has described its heat as around 1.5 million Scoville units, close to a Carolina reaper.

Fruity, floral and fierce

Past the first wave of heat, the Primo tastes fruity with a floral aroma, like the Trinidad superhots it comes from. Makers match that with pineapple, mango and lime, or build savory sauces on garlic, tomato, cumin and ginger.

Mostly extra hot, with exceptions

About two in three sauces here are extra hot. A handful are hot, and about one in five sits in medium, where the Primo is a flavor note rather than the main event. Several also blend in scorpion, ghost pepper or reaper.

How to use it

A few drops go a long way. 7 Pot Primo sauces shine on pizza, wings and grilled chicken, and they’re excellent cooked into chili, barbecue sauce, pork and shrimp dishes, where the fruit comes through and the heat spreads out.

Buying your first one

Treat it like a reaper: work up through ghost pepper and scorpion sauces first. Then start with a 7 Pot Primo sauce that pairs the pepper with fruit, or one of the medium bottles to taste the pepper without the full force.
