CaJohns Hydra is an extra hot sauce from CaJohns’ Legendary Monster line, built on the 7-Pot Primo, a superhot pepper that CaJohns says was first cultivated in 2005 around Lafayette, Louisiana. The pepper leads, with garlic and a little cane sugar behind it.

It’s named for the seven-headed serpent of Greek myth. CaJohns suggests it for gumbo, jambalaya and étouffée, grilled meats, wings and seafood, and chili and stews.

CaJohns Fiery Foods Co.

One of the most awarded names in craft hot sauce, CaJohns Fiery Foods was founded in central Ohio in 1996 by John “CaJohn” Hard, a fire protection engineer with a love of spicy food.

CaJohns makes a huge range: Small Batch garlic cayenne, jalapeño and habanero sauces, a black garlic series, Serrano Lime, Wild Mushroom, Fatali Fire and Raspberry Honey Mustard. At the top end, the Black Mamba sauces use pepper extract for extreme heat. Medium is the biggest group here, with plenty at both ends of the scale.
