Djablo Power Jab is a hot Filipino sauce made for Hot Ones: serrano, Thai chili and dried scorpion peppers with fresh garlic, olive oil, agave and ginger-infused cane vinegar. Macerated ginger gives it a tangy-sweet note and a thinner body, so a little goes a long way.

It was the fifth sauce on Season 22 of Hot Ones. Use it in dips, dressings and marinades, and on chicken adobo, lumpia, pork belly, fried rice and grilled seafood.

About the maker

Djablo Sauce

Filipino hot sauce from New York City, founded by Laura Dadap and built on the recipe her father perfected after moving from the Philippines.

Djablo gets its punch from ginger, garlic and cane vinegar, with serrano and other peppers for heat. The Original is the everyday bottle, Smoked Djablo adds a smoky edge, and Power Jab, which was featured on Hot Ones, turns up the heat. Try them on eggs, rice, noodles, dumplings and grilled meat.

What hot actually means

Where this sits on the scale

30,000–350,000 SHU on the SCOVILLED scale. Habanero territory: heat that lingers, with room left for flavor.
