Green Belly Foods Red Belly is a medium, smoky hot sauce built on the cobanero, a dark red, wrinkly pepper from the cloud forests of Guatemala, where Mayan communities harvest it. Its naturally smoky flavor is paired with sweet fire-roasted tomatoes and garlic and finished with the tang of organic apple cider vinegar. Green Belly sources its cobaneros directly from Mayan Q’eqchi’ farmers.
Try it on pizza, eggs, street tacos, grilled meats and pasta. Green Belly Foods, which Juan started at a farmers market in 2015 with his mother’s Guatemalan recipe, makes its sauces in Colorado.

About the maker
Guatemalan-inspired hot sauces from Boulder, Colorado, based on the recipes Juan Ignacio Stewart learned in his mother’s kitchen in Antigua.
Juan started sharing the family hot sauce at farmers markets in 2014, and his cousin Charlie soon joined him. The flagship Green Belly is a fresh, herby cilantro and habanero sauce, joined by Red Belly and Yellow Belly. All three are mild to medium.
