Dreams of Calypso is a mild, Caribbean-style hot sauce from Angry Goat Pepper Co., made with pineapple, mango and yellow Scotch bonnet peppers, plus lime juice, yellow mustard, carrot and allspice.
Angry Goat made it as a tribute to Trinidad and Tobago, which it credits as the birthplace of calypso music and many of today’s hot peppers. This is the original recipe; the hotter version with yellow 7-Pot peppers, featured on Hot Ones, is Dreams of Calypso Private Reserve. Try the original on egg rolls, pork, poultry, rice, pizza or eggs.
