Chili and Hot Sauce: What could go right?

February 26th is National Hot Sauce Day!! 

But how do you decide WHICH sauce ties your ingredients together? 

Our favorite trick is to make a 'clean batch' with no sauce: dish out several small bowls & add a different sauce to each bowl!  This gives you a chance to try sauces you don't normally put in chili without committing to a whole potful.  Still not sure?
