Vandal Pepper Sauce, the Northwest classic also called Vandal Red, is a medium, versatile sauce with deep, earthy chile de árbol and fruity red jalapeño balanced by bright lemon and savory tomato. Spike Connelly calls it a cross between the garlicky, bright heat of Sriracha and fresh lemon.
Try it on pizza, pasta, eggs and sandwiches, or use it to kick up soups, sauces and dressings. Vandal Pepper Sauce began in 2018 at The Breakfast Club restaurant in Moscow, Idaho; its success led chef and co-owner Christopher “Spike” Connelly to start Irish Spike’s, which now sells it.
