California Hot Sauce Solutions Mexicali is a mild, slow-cooked, border-town chili verde in a bottle: a potent base of fire-roasted tomatillos with Hatch chiles, jalapeño and serrano, garlic, lime juice and agave. It opens the season 31 lineup of Hot Ones.
It also took third place for verde hot sauces at the 2026 Scovie Awards, and for green and verde sauces at the 2026 Artisan Flave Awards. Add it to guacamole, pork tamales and chicken burritos. California Hot Sauce Solutions, in Oceanside, California, was founded in 2018 by Tim Paulman of Paulman Acre and Jason of J’s Small Batch; it makes their sauces and those of dozens of other West Coast brands, and Mexicali began as a Paulman Acre sauce.

About the maker
An Oceanside, California sauce kitchen that makes hot sauce for more than 50 local brands, founded by the makers behind J’s Small Batch and Paulman Acre.
Their own El Tapalula is a mild, classic Mexican table-style sauce made with pequin, chile de árbol, New Mexico and guajillo chiles, seasoned with cumin and oregano. Shake it on tacos, eggs, burritos and pozole.
