CaJohns Wild Mushroom is a mild, thick umami sauce of wild mushroom and red miso on a vegetable stock and red wine vinegar base, with chipotle and cayenne for a subtle, warming back heat.

CaJohns says it shines on red meat, from burgers and steaks to short ribs, and calls it a mushroom Swiss burger’s best friend. It also adds depth to pot roast, stews, soups and chili, marinades for chicken or tofu, and vegetables. It contains soy and wheat.

One of the most awarded names in craft hot sauce, CaJohns Fiery Foods was founded in central Ohio in 1996 by John “CaJohn” Hard, a fire protection engineer with a love of spicy food.

CaJohns makes a huge range: Small Batch garlic cayenne, jalapeño and habanero sauces, a black garlic series, Serrano Lime, Wild Mushroom, Fatali Fire and Raspberry Honey Mustard. At the top end, the Black Mamba sauces use pepper extract for extreme heat. Medium is the biggest group here, with plenty at both ends of the scale.
