CaJohns Quetzalcoatl Ghost Chile is a hot, earthy sauce of jalapeño and cayenne peppers with ghost pepper (bhut jolokia), grounded with onion and garlic and warmed with cumin and ancho chili powder. The heat rises steadily rather than all at once.

It’s named for Quetzalcoatl, the Feathered Serpent of ancient Mexico. CaJohns suggests it for tacos, enchiladas and burritos, grilled meats and roasted vegetables, and chili, stews and Southwest dishes.

CaJohns Fiery Foods Co.

One of the most awarded names in craft hot sauce, CaJohns Fiery Foods was founded in central Ohio in 1996 by John “CaJohn” Hard, a fire protection engineer with a love of spicy food.

CaJohns makes a huge range: Small Batch garlic cayenne, jalapeño and habanero sauces, a black garlic series, Serrano Lime, Wild Mushroom, Fatali Fire and Raspberry Honey Mustard. At the top end, the Black Mamba sauces use pepper extract for extreme heat. Medium is the biggest group here, with plenty at both ends of the scale.
