CaJohns Leviathan is an extra hot sauce from CaJohns’ Legendary Monster line, made from five chocolate chiles: Trinidad Douglah, chocolate 7-Pot, chocolate bhut jolokia, chocolate habanero and chocolate Scotch bonnet. The flavor is deep, smoky and earthy, then the burn builds and holds on.

The chocolate in the pepper names doesn’t make it a dessert sauce: CaJohns says it belongs in chili, stews and slow-cooked meats. It’s named for the sea serpent of ancient Near Eastern myth.

About the maker

CaJohns Fiery Foods Co.

One of the most awarded names in craft hot sauce, CaJohns Fiery Foods was founded in central Ohio in 1996 by John “CaJohn” Hard, a fire protection engineer with a love of spicy food.

CaJohns makes a huge range: Small Batch garlic cayenne, jalapeño and habanero sauces, a black garlic series, Serrano Lime, Wild Mushroom, Fatali Fire and Raspberry Honey Mustard. At the top end, the Black Mamba sauces use pepper extract for extreme heat. Medium is the biggest group here, with plenty at both ends of the scale.
