CaJohns Fatalii Fire is a hot, savory sauce built on the Fatalii pepper, with a base of carrots, celery, onion and red bell pepper, garlic and black pepper, and habanero and Red Hatch chile for layered heat. The heat is assertive but balanced.

CaJohns calls it a table sauce for roasted vegetables, seafood, grilled meats and eggs, and it’s good in soups too.

About the maker

CaJohns Fiery Foods Co.

One of the most awarded names in craft hot sauce, CaJohns Fiery Foods was founded in central Ohio in 1996 by John “CaJohn” Hard, a fire protection engineer with a love of spicy food.

CaJohns makes a huge range: Small Batch garlic cayenne, jalapeño and habanero sauces, a black garlic series, Serrano Lime, Wild Mushroom, Fatali Fire and Raspberry Honey Mustard. At the top end, the Black Mamba sauces use pepper extract for extreme heat. Medium is the biggest group here, with plenty at both ends of the scale.

What hot actually means

Where this sits on the scale

30,000–350,000 SHU on the SCOVILLED scale. Habanero territory: heat that lingers, with room left for flavor.
