Anchor Bar
The Buffalo restaurant where the chicken wing was invented, bottling the sauce that started it. Frank and Teressa Bellissimo opened the Anchor Bar on Main Street in 1935; on 4 March 1964 Teressa deep-fried a batch of wings, tossed them in a cayenne and butter sauce, and served them with celery and blue cheese.
Five wing sauces carry that recipe out of Buffalo: the Original, a Hotter version, Honey Barbecue for the sweet-and-sticky camp, Extreme Heat for the other one, and a wing kit with everything in it. They sit between mild and hot, they are built to be tossed rather than dripped, and they are the reference point every other wing sauce is measured against.
